Basturma is a delicacy made from sirloin that’s dry-cured with salt and a bold blend of spices. After curing, it's hung to dry and age for six days, gradually losing nearly half its moisture. The result is an intensely flavorful meat with a chewy, concentrated texture. Uniquely, basturma is never cooked—its taste and character come entirely from time, tradition, and careful preparation.
